Ingredients

• 6 oz. whole wheat medium elbow macaroni
• 1/2 tsp. cornstarch
• 3/4 cup evaporated skim milk
• 6 oz. (about 1 1/4 cups) low-fat sharp Cheddar cheese, grated
• 2 tsp. Dijon mustard
• freshly ground perrper, to taste
• 2 medium tomatoes, seeded and diced

1. Coat an 8” x 8” baking dish with cooking spray and set aside. In a large pot of boiling salted water, cook the pasta according to package directions; drain and set aside. Preheat the broiler.
2. In a saucepan over medium heat, stir the cornstarch into 1 Tbsp. of the evaporated milk to dissolve, then whisk in the remaining milk. Add the cheese, mustard and pepper to taste. Bring to a simmer, stirring, and cook until the sauce thickens a bit and the cheese is completely melted. Stir in the cooked pasta and spoon into the prepared baking dish.
3. Sprinkle with the diced tomatoes and place under the broiler for 2 to 3 minutes, until the top is golden. Remove from the oven and let sit for 5 minutes before serving.
