    1 lb. boneless, skinless chicken breasts, cubed
    1 Box Chicken Broth
    1 pkg. burrito seasoning
    1 cup water
    1 15 oz. can of black beans, rinsed & drained
    1/2 cup frozen corn
    2 Tbsp. green chilies, chopped
    6 (8in) flour tortillas
    2 oz. Shredded lowfat Mexican Cheese
    1 lg. tomato, chopped
    6 Tbsp. lowfat sour cream


Pour Chicken broth into pot and add Chicken breasts and boil until no longer pink. Remove Chicken from pot and let cool enough to handle. Shred chicken with a fork.

In a large pan heat burrito seasoning mix with water, black beans, corn and chilies. Simmer 10 minutes.

Warm tortillas according to package directions.

Spoon chicken mixture down the center of tortilla.

Garnish with cheese, tomato and sour cream if desired.

Fold in both sides of tortilla, and then roll into a secure wrap.

Repeat with remaining chicken mixture and tortillas.

Makes 6 servings.
