Ingredients

    2 large Egg, fresh, whole, raw
    0.25 cup Coconut Oil
    1 tsp Baking Powder
    1 tsp Baking Soda
    2 cup Bearitos Fat Free Black Bean Refried Beans
    16 serving Stevia in the Raw
    2 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    65 gram Cocoa Powder Hershey's 100% Cacao Dark serv=5g 1 tbsp
    10 tbsp Peanut Butter Chips, Hershey's/Reese's
    2 tsp Vanilla Extract
    .5 cup Greek yogurt Fage, plain, 0% fat
    .25 cup Silk cashew milk unsweetened
    3 serving Allmax Hexapro Chocolate

Tips

Drained and rinsed black beans can be used if fat-free refried black beans are not available. You will need to use more beans and almond milk to offset the dryness of the beans, but they can be processed in a food processor with the yogurt to blend them into a paste.

I combine all the dry ingredients into a ziploc bag so that they can all be mixed together before being added to the already mixed wet ingredients. Yes, I add dry to wet instead of wet to dry.


Directions

Bake at 350f for the following:
18-22 minutes for mini-muffins

Makes ~55-60 mini muffins
