Ingredients

    16 oz Lamb, Ground
    1.25 cup, chopped Onions, raw
    .5 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
    1 sweet potato, 5" long Sweet potato
    2 cup, chopped Carrots, raw
    1 cup, sliced Zucchini
    1 cup squash, yellow summer
    1 cup, cubes Butternut Squash
    2 cup Chicken stock, home-prepared
    1 tbsp ground cumin
    1 tsp Cinnamon, ground
    .25 tsp Allspice
    1 tbsp Extra Virgin Olive Oil
    1 oz Arrow Root Powder or corn starch

Directions

Heat oil in pan, add onions, carrots red pepper. Steam sweet potato cut into chunks and butternut squash for 5 minutes. Add summer squash and zucchini to pan, cook 2 minutes. Add ground lamb and cook until brown, stirring. Add cumin, cinnamon, allspice and salt and pepper to taste. Add 2 cups of chicken stock. Bring to a boil. Combine Arrow Root (or cornstarch) with a third cup of cold water. Stir into boiling mixture. Turn heat down to a low simmer. Cook 30 minutes.
