    140g plain flour
    0.5 tsp baking soda
    115g butter, at room temperature
    165g brown sugar
    1 egg
    265g crunchy peanut butter
    1 tsp vanilla extract


Preheat oven 350'F/180'C. Grease or line 2 baking trays.
Sift together flour, baking soda and set aside.
with mixer, cream the butter and sugar together until light and fluffy.
Stir in peanut butter and blend well. stir in the dry ingredients. Refrigerate 30 mins or until firm.
Spoon out rounded teaspoonfuls of dough on to
trays and press flat with a fork.
Bake until lightly coloured, 12-15 minutes. Transfer ot a rack to cool.
makes 30 portions.
