    1/2 cup solid vegetable shortening
    1 cup splenda
    1 large egg
    1/4teaspoon peppermint extract
    2 cups flour
    3/4 cup unsweetened cocoa powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/3 cup nonfatplain yogurt


in a large bowl, beat shortening and sugar with an electric mixer on medium speeduntil light and fluffy. Beat in egg and peppermint extractuntil well blended.

Add flour mixed with cocoa, baking soda, and salt and beat until well blended. Stir in yogurt.

Shape mixture into an 8-nich log. Wrap in wax paper and refrigerate 1 hour, until firm.

Preheat oven to 350 degrees. Using a sharp knife, cut doughin 1/4-inch-thick slices. Place about 1 inch aparton ungreased baking sheets. Bake 12 to 15 minutes untilcooked through. Let cookies cool on sheets 2 minutes, then remove to a rack and let cool completely.

    The only ingredient in the nutritional breakdown is mint chocolate ice cream (?) which isn't even on the ingredient list! This is not the real calorie count and I assume the recipe makes more than one serving! - 11/11/12
