    2 large zucchinis
    16 oz Ground Turkey - 97% fat free extra lean white turkey original recipe calls for ground beef
    3 cup Hunt's Tomato Sauce, no salt added
    1 can (6 oz) Tomato Paste
    1 cup, chopped Carrots, raw
    1 stalk, large (11"-12" long) Celery, raw
    1 cup, chopped Onions, raw
    1 tsp, crumbled Bay Leaf
    1 tsp Oregano
    1 clove Garlic
    .5 cup (8 fl oz) Water
    1 tbsp Olive Oil
    4 tbsp Parmesan Cheese, grated


Mince celery, carrot, garlic & onion. Sauté in olive oil on low for 5 minutes. Add ground turkey, cook until browned. Place meat & vegetables in a crockpot. Add tomato sauce, paste, water, bay leaf & oregano to meat mixture? Cook on low for 4-6 hours.

Preheat grill on med.

Slice zucchini lengthwise into 1/4 inch slices, brush with olive oil, sprinkle with salt & pepper. Grill for 2 to 3 minutes on each side. Allow to cool slightly.

Assemble roll ups: Spread about a tablespoon of meat along half of each grilled strip. Sprinkle with grated parmesan cheese, roll up and place seam side down on a platter. Repeat with each grilled zucchini slice.

Serving Size: 2 roll ups is one serving
