    Beef stock, home-prepared, 8 cup
    Lentils, 1.50 cup
    Onions, raw, 1 large
    Olive Oil, 2 tbsp
    Flour 2 tbsp
    Milk, nonfat, 1 cup
    Egg Yolk, 1 large
    Salt, 1 dash
    Pepper, black, 1 dash


1, Wash lentils; soak them in water for 30 min. ans strain.
2, Lightly fry onion in a soup pot with oil. Add flour and stir occasionally.
3, Add the beef stock and lentils and cook until lentils are soft.
4, Using a sieve, strain the mixture onto another pot, pressing with a spoon.
5, Five min. before serving, beat the egg yolk and milk together, slowly stir the egg and milk mixture into the soup and remove from heat.
6, Add salt and pepper, and serve with lemon.
