Ingredients

    350 gram(s) bell pepper, red, sweet, raw
    1 large Onions, raw
    30 oz Turkey, Ground turkey, 93% lean
    2 cup Beans, black
    6 cup Spaghetti Squash
    5 cup Del Monte Diced Tomatoes, No Salt Added
    1 tbsp Chili powder
    1 tsp Pepper, red or cayenne

Directions

Prepare spaghetti squash; Par boil peppers. Cook turkey with garlic, peppers and onions. Drain turkey, and add black beans, spaghetti squash and diced tomatoes and blend until well mixed. Add cumin, chili powder and red pepper to taste. Grease baking dish, stuff peppers with mixture and place remaining mixture around peppers in dish. Heat oven to 350 and bake until mixture is heated through, about 45 minutes.

Serving Size: Makes enough stuffing for 8-10 peppers
