Ingredients

    1 lb lean ground beef
    3 large scallions(or purple onion), chopped
    1/2 large purple onion
    11 garlic cloves, chopped finely
    1 med. bell pepper
    2 small yellow bell peppers
    3 jalapenos
    13 1/2(or 2 284 g bag) cups of spinach, fresh
    1tbsp fennel, ground
    4 tsp of garlic salt
    2 tsp ground black pepper
    1 tbsp italian seasoning
    2 tsp oregano
    4 tsp basil
    3 cups of tomato sauce
    half a can of tomato paste
    1 tbsp extra virgin olive oil
    2 tbsp balsamic vinegar
    1 cup of water
    1/2 cup of feta
    1oz finely grated reduced fat cheddar cheese
    1 oz Gouda
    3 oz mozzarella
    1 pkg spinach lasagna noodles

Directions

Before starting mixture, cook lasagna noodles according to box's directions.Rinse, put between wax paper so noodles do not stick to one another.
Then cook lean ground beef in heavy skillet until browned.Add in veggies (except spinach,) garlic, Italian seasoning,garlic salt, pepper, and ground fennel seed.Cook until tender.Add in spinach and cook until slightly tender.Add in 3 cups of tomato sauce and 1 cup of water.Let simmer for about 10 mins.Divide mixture evenly in half (makes enough for two lasagnas).Spray pan with pam, Spread about half a cup thinly on bottom.Divide rest of mixture evenly between layers of 3 noodles (I used 12 noodles) cooked al dente while sprinkling cheese sparingly between layers with mixture.Finish last layer with remaining cheese.Bake in oven at 450 for about 15 mins or until heated through.
