Ingredients

1/4 Cup of almond flour
3 tsp xylitol separated in 3 ( or sweetener of choice)
2 Egg
1 Lemons seeds removed and peeled (keep some zest to taste)
4 tbsp Butter, unsalted, melted separated in 3
1 pint of fresh Raspberries
Directions
Crust:
1. Combine Almond flour, 1 tsp sweetener of choice and 2 tbsp melted butter.
2. divide mixture into 3 different mason jar and press on the bottom( I used wax paper to do this)
3. Cook in Microwave for 2 minutes at 50% ( or until it is golden brown)
Lemon:
1. Blend the peeled Lemon, as much of the skin you want for zest, 1 egg, 1tbsp butter and 1 tsp of sweetener.
2. Pour mixture over the cooked crust in the mason jar and microwave for 1 1/2 minutes at normal temperature.
Raspberry:
1. Blend the raspberries, 1 tsp sweetener, 1tbsp butter and 1 egg.
2. Pour over the lemon layer and cook for 2 minutes.
Enjoy warm or let cool depending on how you feel.
Refrigerate the non used portions.
