Ingredients

4 cup chicken stock, low sodium
16 oz Herdez Salsa Verde
15 oz Black Bean, rinsed and drained
15 oz Cannelloni Beans, rinsed and drained
13 oz Butterball Everyday Turkey Sausage Hardwood Smoked
2 cup Long Grain White Rice (dry)
1 tbsp Crushed Red Pepper
1 tbsp Garlic powder
2 tsp Tarragon
1/2 cup chopped onion
Tips
Browning the sausage adds a lot of flavor -and you can get a nice scald on by keeping a little water in the saute pan.
Directions
- Combine chicken stock, garlic, crushed red pepper and
tarragon in a medium stock pot. Heat to boil, stir, cover and reduce to a slow simmer. Continue cooking 15 minutes or until all liquid is absorbed.
- Drain and rinse beans.
- Cut turkey sausage on the diagonal. In a small non-stick saute pan, add the sausage, onion and 2 tablespoons water. Cook over medium heat, turning frequently as the sausage begins to brown.
- Drain rice and return to the stock pot. Add salsa verde and mix together. Continue cooking over low heat until heated through, about 5 minutes.
- Add beans and turkey sausage, mix together and serve.
