Ingredients

4 tbsp Butter, unsalted
1 tbsp Extra Virgin Olive Oil
1 cup, chopped Onions, raw
.5 cup, diced Celery, raw
2 tsp Garlic, minced, jar, great value, 1 tsp/1 clove (by LINLU00)
0.25 cup Flour - Gold medal all purpose flour
4 cup Half and Half Cream
14 ounces chicken broth low sodium
1/2 t Thyme
1/2 t dried parsley flakes
1/4 t ground nutmeg (optional)
1 cup, grated Carrots, raw
2 cup Spinach, canned drained
2 cup Chicken Breast, no skin, Cooked, chopped (by SUZKELLEY)
2 cup Mediterranea Potato Gnocchi
Tips
I buy the buttery garlic rotisserie chicken at Wal-Mart.
Directions
Melt the butter into the oil in a large saucepan over medium heat. Add the onion, celery and garlic and cook stirring occasionally, until the onion becomes translucent.
Whisk in the flour and cook for about one minute.
Whisk in the half and half and simmer tilll thickened.
Whisk in the broth and simmer till thickened again.
Stir in the seasonings, carrots,chicken and gnocchi.
simmer till the soup is heated through.
Five minutes before serving stir in the drained spinach.
Serving Size: approx 2 cups of delicious soup
