Ingredients

    1/2 cup quinoa
    1 16-oz. bag frozen chopped spinach, thawed
    4 oz. feta cheese, grated or crumbled
    1 cup 1% cottage cheese
    1 cup nonfat egg substitute
    2.5 tablespoons flour
    1 tsp paprika

Directions

Preheat oven to 350 degrees
Cook quinoa in 1 cup water. Bring to a boil, then lower the heat and simmer for 15 minutes. Fluff with a fork.
Squeeze moisture from thawed spinach. Mix in large bowl with feta and cottage cheese.
In a medium bowl, beat egg substitute about 1 minute, then add flour and paprika and beat another minute.
Combine egg mixture with spinach and cheeses. Transfer to an 8 X 8, 9X9, or comparable baking dish that is coated with non stick spray.
Bake at 350 degrees for 30 minutes or until set.

Makes 8 servings.

    I looked at this recipe but it doesn't say where or when to use the Quinoa. Does it go into the mixture then into the oven OR is it used on the side OR something else?? It looks really good! - 9/18/10
