    1 cup Pitted Dates
    1/3 cup cherry or strawberry preserves
    1/3 cup almond or peanut butter
    1/2 cup chia seeds
    1 cup regular oats
    1/2 cup Cherries, dried
    1/2 cup Cashew Nuts (raw, unsalted)
    1/2 tbsp Coconut Oil (for prep)


Line an 8 x 8 inch pan with parchment paper. Coat it with coconut oil to keep the mixture from sticking.

Place the date in a food processor and pulse until the dates are turned to paste and forms a smooth ball with no lumps. Scrape the bowl and add preserves and nut butter. Pulse until they all is combined. Scrape sides of bowl again and add chia seeds and oats. Pulse until dough begins to ball up.

Move mixture to a large bowl and add the cherries and cashews. The mixture will be very sticky, so coat your hands with coconut oil before mixing. Combine ingredients by hand.

Press the mixture into the prepared pan. Try to press it flat and even. Refrigerate for 1 hour.

Cut into 2 inch squares and serve. Refrigerate any remaining bars in an airtight container.
