This is something I made up after bariatric surgery. This is something I made up after bariatric surgery.
Number of Servings: 4


    1 can Dark Red Kidney Beans, rinsed
    1 cup grape tomatoes (about 8), halved
    1/4 cup Salsa
    1/2 cup vegetable Broth
    1/2 cup 2% Shredded Cheddar Cheese
    2 tbsp Extra Virgin Olive Oil
    1 Tbsp minced garlic
    McCormick Fiesta seasoning to taste


Heat the oil and add the garlic. Cook for a few minutes to toast the garlic, but do not let it darken. Add the tomatoes and beans and cook until the tomatoes begin to pop. Add the broth to keep the beans moist. Add the fiesta seasoning and salsa. Mix well and begin mashing the beans with a potato masher. Mash the beans until almost all the beans are pureed. Add more broth if needed to keep the beans moist while mashing. When done. remove from heat and mix in the cheese.

Serving Size: 1/2 cup
