Ingredients

1 piece whole wheat pita
1/2 cup egg whites or egg substitute
3 tablespoons low fat refried beans (see Note)
2-3 slices tomato (can also use canned, no salt added)
cooking spray
salt and pepper to taste (not included in nutrition facts)
Note: I usually use a homemade white bean dip here instead of the refried beans. Feel free to substitute beans in any form you like.
Directions
Preheat a small skillet on medium high. Spray one side of the pita with cooking spray and place it in the skillet, sprayed side down.
Meanwhile, put egg whites into a microwave bowl or cup and microwave about 1 1/2 minutes, or until done, stirring every 20 seconds.
When eggs are done, CAREFULLY remove pita from pan. Spray the cold side with cooking spray and turn over. Spread the beans over the side that has been preheated and return to the skillet, with the beans facing up. Spread the eggs on top of the beans and top with the tomatoes. Add salt and pepper to taste. Cook 2-3 minutes until everything is warmed through and pita is crunchy on the bottom. Enjoy!
