    2 Tbsp Olive Oil
    4 Chicken Breast, 4 oz. a piece
    1 can (14 oz) artichoke hearts
    1 cup red pepper slices
    1/2 cup onion slices
    1/2 tsp. minced garlic
    1/4 cup white wine
    1 tsp. dried thyme


Heat 1 Tbsp. olive oil in a skillet over medium heat, and saute the chicken breasts until they are golden (about 5-7 minutes per side). Remove from skillet and drain on paper towel.

Heat the remaining 1 Tbsp. olive oil, and toss the artichoke hearts, red pepper, onion, and garlic into the skillet. Saute for 3-5 minutes, stirring frequently.

Pour in the wine and sprinkle thyme over the vegetables. Place the chicken breast over the veggies, turn the heat to medium low, cover, and simmer for 10 minutes.
