Ingredients

    595 gram(s) Del Destino Whole Fire Roasted Red Peppers (by DS1222)
    6 cup kale, raw
    .88 cup Beef Broth - Swanson Low Sodium
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    6 tsp Garlic
    3 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
    1 tbsp Extra Virgin Olive Oil

Directions

Saute onion and garlic in olive oil and beef broth. Add kale, saute until kale is softened. Coarsely cut the roasted red peppers, add to mixture and heat over medium through, stir occasionally to prevent burning. Season to taste. Serve with sour cream, lime juice or a low-fat shredded cheese. Monterey Jack would compliment this nicely.
