Ingredients

    1 cup 365 Organic Quinoa
    1 cucumber (8-1/4") Cucumber (with peel) Chopped in small bits
    74 gram(s) bell pepper, red, sweet, raw chopped in small bits
    1 medium whole (2-3/5" dia) Red Ripe Tomatoes chopped in small bits
    3 tbsp Extra Virgin Olive Oil
    .25 cup Lemon juice
    3 tbsp Parsley, dried

Directions

Cook and cool quinoa. Mix with remaining ingredients. Chill and serve.
