Ingredients

    1 clove Garlic
    1 cup Brown Rice, long grain
    0.50 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    0.50 cup Lentils (canned)
    2 cup Cherry Tomatos

Tips

To be truly clean with this recipe, buy an organic brown rice, and organic lentils. Make your tomato sauce from scratch by simply blending roma tomatoes and cooking with olive oil and garlic for 35-40 minutes.


Directions

1. Boil Rice
2. While rice is boiling, blend tomatoes and simmer with a half cup of water in a pot, for 20 minutes.
3. When rice is cooked, strain and let sit
4. In a wok, fry garlic in 1/2 teaspoon of coconut oil
5. When garlic is browned, add lentils and rice and tomato sauce
6. Stir until ingredients combine and serve
