    1 1/2 cups Whole Wheat Pastry Flour
    1 cup Sprouted Spelt Flour
    1 tsp baking soda
    1/4 tsp Salt
    1 cup Applesauce, unsweetened
    2 tbsp flaxseed meal soaked in 2 tsp water.
    1/3 cup soy milk.
    1 tsp Vanilla Extract
    6 tbsp Blue Agave Sweetener, or Honey
    1 cup Kamut Flakes
    1/3 cup Chocolate Chips, vegan
    1/3 cup Raw Pecan pieces
    1/3 cup Dried Black Currants
    1/4 cup Canola Oil


Mix Flours, Kamut, baking soda and salt and set aside.
Mix oil, applesauce, soaked flax, soymilk, vanilla and sweetener and beat until creamy.
Gradually fold in dry ingredients into a peanut butter consistency, adding water as required.
Fold in pecans, currants and chocolate chips.
Let sit for 10 min.
Place parchment on cookie sheet and place tbsp globs of cookie dough on sheet.
Bake at 350 degrees for 15-20 minutes.
