Ingredients

1 medium onion chopped
4 cloves garlic crushed
2 small red chillies finely chopped
1 tb ground cumin
2 tsp ground coriander
4 tb tomato paste
800g canned chopped tomatoes
6 cups vegetable stock
100g diced red or green capsicum
400g canned sweet corn drained
2 x 400g can butter beans drained and rinsed
2 x 400g can red kidney beans drained and rinsed
400g can chick peas drained and rinsed
jalapeno peppers, sour cream and shredded cheese to serve
Directions
Soften onion in a non-stick pan, add garlic and spices and cook until fragrant. Add tomatoes and tomato paste and stir until warmed.
Combine all ingredients in slow cooker and cook on low 6-8 hours, high 3-4 hours or auto 9-10 hours. Makes 10 1 cup serves
