    1 scallion
    1 zucchini, chopped
    basil and pepper, as desired
    2.5 wedges laughing cow light cheese
    1/2 cup fresh mozzarella
    5 roma tomatoes, diced
    3/4 cup skim milk


Saute zucchini in cooking spray. Add milk, bring to boil. Lower heat, add pepper, basil, tomatoes and cheese. Simmer for 10 minutes. Remove from heat; add mozzarella. Let sit five minutes before serving. Makes 6 1 cup servings.
