Number of Servings: 4


    1 T Olive Oil
    3 T Curry Powder or Garam Masala
    ½ tsp Red Pepper Flakes (or Cayenne Pepper)
    2 T Grated Ginger
    1 Small Onion, chopped
    5 Cloves Garlic, chopped
    1 can Chickpeas


1) Heat oil in skillet.

2) Add curry powder and sautee for 30 seconds on medium heat (until fragrant).

3) Dump in ginger, onions, garlic and sautee another minute or two.

4) Add tomatoes, chickpeas, and spinach as well as ½ cup water.

5) Let cook for 15 minutes (or until the water is gone) and stir in cilantro and yogurt off the heat.

6) Serve over brown rice.
