All of the yumminess of stuffed cabbage without all of the work! All of the yumminess of stuffed cabbage without all of the work!
Number of Servings: 6

16 oz 93% Lean Ground Beef
14.5 oz. can Del Monte Diced Tomatoes, No Salt Added
1 medium (2-1/2" dia) Onions, raw, chopped
    3 clove Garlic, minced
.5 cup Brown Rice, medium grain
.5 head, medium (about 5-3/4" dia Cabbage, fresh, thinly sliced
    .5 tsp Pepper, black
    1 tsp Garlic powder
.5 can (6 oz) Tomato Paste (I use paste from a tube, about 3 teaspoons worth)
4 cup Kitchen Basics Chicken Stock (Fat free, low sodium) (by ADDYMORENO)

Saute the ground beef until no longer pink. Drain well. Add onion and garlic and continue to cook over medium heat until onion gets soft. Add tomato paste, and stir into meat until you can smell a tomato smell. Add the whole can of diced tomatoes, and stir until combined. Add black pepper and garlic powder, then add rice. Stir to combine. Add 3 cups of the chicken stock, and the shredded cabbage. Simmer over low heat, stirring occasionally. If the liquid begins to evaporate before the rice is cooked completely through, slowly add more chicken stock and stir well to combine.
