    1.5 cup couscous (dry)
    1/2 tbsp. evoo
    2 stalks celery, chopped
    1/2 small onion, chopped
    1.5 cup water

    1/2 cup raisins
    1/4 cup scallions, chopped
    1 cup each red/green peppers
    1 can chickpeas, drained
    lots of cilantro, chopped

    1/2 cup plain yogurt
    1 juice of lemon
    2 tsp ground coriander
    2 tsp ground cumin
    4 tsp grated fresh ginger


To make couscous: heat oil in saucepan over medium heat. Add the onion and celery and cook for 2-3 minutes until soft. Stir in couscous, coating with oil. Cook and stir for 1min until lightly toasted. Add water and bring to a boil, stirring gently. Remove from heat and let stand, covered, for 30mins until cool and liquid is absorbed. Fluff with fork.
Mix couscous with veggies.
To make dressing: mix together lemon juice, yogurt, oil, ginger, garlic, cumin and coriander.

  • Made this recipe. Fabulous! It's listed in the South Beach Diet book with all the details. But it only served 4, when served as a side dish along with spinach and 3 ounces of roasted chicken. - 10/18/10
