Introduction

Ingredients

    1/2 tsp. dried taragon leaves
    1/2 tsp Rosemary, dried
    1/8 tsp Thyme, ground
    1/2 tsp. dried basil
    .8 to 1 lb. chicken tenders
    1 cup, pieces or slices Mushrooms, fresh
    1 medium (2-1/2" dia) Onions, raw
    1 1/2 cup Swanson Chicken Broth 99% Fat Free
    1 1/2 tbsp Extra Virgin Olive Oil
    1 large yellow pepper
    1 1/2 cup instant white rice

Directions

Cut the raw chicken breasts into chicken tenders. set aside and wash hands.

Slice the pepper and onions into strips and saute in some of the oil.
Push to the far edge of the skillet and add the rest of the oil. Cook the chicken tenders until done.

In a saucepan, add the broth, instant rice, and herbs. Simmer until rice is done (about 5-8 minutes after it starts bubbling.)

Add the rice to the chicken skillet and blend it all together.

Top each serving with mushrooms sauteed in a little butter.
