Number of Servings: 8


    3 cans of chickpeas (drained and rinsed) or you can cook your own
    1 large onion (sliced)
    3 large carrots (grated)
    1 head broccoli (cut into pieces)
    1/2 cup of peanut butter
    2 tablespoons chives (chopped)
    1/2 cup whole wheat bread crumbs
    3 tablespoons of olive oil (cold-pressed is best)
    1 cup of vegetable broth
    1 teaspoon salt
    Pepper to taste


Makes 8 servings

Preheat oven to 350 degrees F
In a large bowl mash chickpeas using a potato masher (about 2 minutes).
Add the onion, carrots, broccoli, and chives and mix well.
Add the peanut butter and then mix again.
Add the bread crumbs and then mix again.
Add the olive oil and then mix again.
Add the vegetable broth and then mix again and add salt and a dash of pepper.
Put everything into a casserole dish.
Press the mix firmly.
Cover with foil and bake for 45 minutes.
Uncover and then bake for 15 minutes more.

Serve hot but it also tastes good cold in lunches the next day.
