Introduction

Quick, easy pancakes for one person! Quick, easy pancakes for one person!
Number of Servings: 1

Ingredients

    1/4 cup Whole Wheat Flour
    1/4 tsp Baking Powder
    1 serving Stevia in the Raw or other non-calorie sweetener
    dash of salt
    Cinnamon, ground, to taste
    1/4 cup banana, fresh, about 1/2 of a banana
    3 tbsp egg substitute
    1 tbsp Milk
    1/8 tsp Vanilla Extract

Directions

Combine dry ingredients; mix well. In separate bowl, combine wet ingredients and mashed banana. Mix well. Add wet ingredients to dry, mixing thoroughly.

Spray a large pan with nonstick spray and bring to medium heat. Pour batter on to pan to form 5 mini pancakes. Once they begin to look solid (about 1 minute), gently flip. Cook for an additional minute or until both sides are lightly browned and insides are cooked through.
