    1/4 c. chopped scallions
    4 medium fresh asparagus spears, broken into small pieces
    1/2 c. fresh broccoli, chopped
    1/2 c. shiitake mushrooms, sliced
    1 cup cherry tomatoes, diced
    1/4 c. low fat cheddar, shredded or grated
    1/4 c. shredded Monterey Jack Cheese
    Bread, pita, whole-wheat, 2 pita, small (4" dia)


Prepare vegetables and mix together in a bowl. On a flat surface (such as a cookie sheet if you are using the oven, or a plate if you are using the microwave. Spray the cookie sheet or plate with a nonstick spray before you start.), cut the pitas into small triangles. Make sure to spread them out so that they're all on one tier and are not stacked up.
Place the vegetable mixture over the pitas, taking care to cover as much of the surface as possible.
In a separate bowl, mix the cheeses together.
Top the pita-vegetable mixture with the cheese, doing your best to cover every surface. If you don't cover everything, that's fine.

Bake in a 350 degree oven for 10 minutes or
in a microwave for 4 minutes on high.

Makes 2 servings.
