Introduction

These adorable single-serving ham cups turn any breakfast into a special occasion. Feel free to jazz these up with your preferred seasonings. These adorable single-serving ham cups turn any breakfast into a special occasion. Feel free to jazz these up with your preferred seasonings.
Number of Servings: 6

Ingredients

    6 slices lean deli ham
    6 eggs
    1/2 cup 2% shredded Cheddar cheese
    1 Tbsp chopped chives
    pepper, cooking spray

Directions

Preheat oven to 350.
Spray 6 cups of a muffin tin with cooking spray. Arrange the ham slices so they line the muffin cup completely. The edges will stick up above the cup. Bake for 10 minutes. Remove from oven and break an egg into each cup, gently breaking yolk. Sprinkle with pepper.

Return to oven for 10 minutes. Check the eggs. If they are done to your liking remove and sprinkle with cheese and chives. If not, continue cooking, checking every minute or so.

Serve immediately. Makes 6 servings.

    This is such a great, tasty recipe! I have been looking for a way to get a high-protein, portable breakfast that is not in the form of an energy shake or bar! This fit the bill exactly. I used black forest ham and I cooked the eggs for about 13 minutes - I like mine a bit more done. A++++++ - 4/15/09

    Fantastic! I too let the eggs cook longer as I like them firmer. The ham became a little burned as a result. Next time, I believe I'll cook the ham for only 5 minutes before adding the eggs, and cook the eggs 13-15 minutes instead of 10. Should balance out nicely. Such a great breakfast!! - 6/9/09

    I loved these quick and easy breakfast cups! I added some chopped onion, red & green pepper and a few brocolli bits for more veggie punch. You could even throw in a few toasted pine nuts...yummy! - 6/25/09

    This is really a mini quiche.......I put every thing in the food Processor then spooned it into "Pam"Oversize muffin cups (made 6) Baked 20 min. added extra cheese on top back into hot oven (heat off) to melt.     I have made something like this before! Instead of putting the ham on the bottom I have used reduced fat croissent roles, just put them flat for a crust. I have also used egg beaters instead of regular eggs, and put whatever veggies I need to get rid of. Made them for Mother's Day, they were a hit - 6/30/09

    I love this recipe!! I improvised a bit -- I baked the ham for 5 minutes in the cupcake tin, then added raw scrambled eggs (including onion, lowfat cheese, salt, pepper, and chives), and baked for 16 minutes. Then, cooled for about 5 minutes before serving. Perfect! - 7/12/09

    I've made these 3 or 4 times now and my whole family loves them. My kids eat two sometimes for breakfast. Easy to keep for a few days in the fridge and heat up for breakfast before school. Will make over and over again. I left out the chives since my young kids would have balked at them. - 2/7/09

    Loved this handy option (and fun for kids). I used deli turkey instead of ham to line cups and added whatever vegetables I had on hand as well. Actually ended up mixing the whole mixture together as if I was making scrambled eggs and poured in the lined muffin tin. - 8/5/09

    great with turkey bacon and takes less time to cook. sometimes you have to add a little oil to tins as the turkey bacon is not as greasy as regular bacon. - 7/2/09

    These are IN my Nutrition Tracker as a staple! Used fresh chives from my herb garden and baked eggs 15 min after toasting ham.     This was simple and great. I did not have any chives so I used tarragon, and I sprinkled the cheese on top the raw egg and baked it with the egg. This will become a regular brunch in our house. We served it with cucumber slices. daughter squashed it between two pieces of toast. LOL - 7/8/09

    I must agree with FLORIDASUN and LOVEBEAM above in their praise, and add some of my tricks as well.

    I cut the fats by using Egg Substatutes, in a carton, and at a certain kitchen gadget store (initials are W-S) I found an oil mister which uses hand pump air as a propellent for the cooking spray.

    I've been going to try these for a quickie breakfast but I'll probably use Egg Beaters instead and maybe Canadian bacon instead of ham. Should be about only 3 WW points so I could add a piece of whole wheat, low fat, high fiber toast (2 pt.) and have a great breakfast to hold me for quite awhile. - 11/1/09

    I loved this recipe!! I'm not a big egg person..just scrambled, so this worked very well! I used 4 eggs instead of 6 and added about a 1/4 of 2% milk, scrambled, and added salt, pepper, and chives to taste! Amazing! Family loved it! Making it for Easter Brunch this Sunday! Thanks!!! - 3/28/10

    I loved these! I used turkey instead of ham, and they were fantastic. Also, as a hint, I made them a day before and put them into separate Tupperware containers in the fridge. Before work I just pull one or two out, pop in the microwave for 30 seconds and I have a gourmet breakfast!

    I made these with egg beaters! I sprayed the tin well with EVOO, then scrambled egg beaters with a 1/4 milk, a can of drained tiny shrimp, and 2TBSP of diced onion! sprinkled low fat cheddar on top and BANG...what a great breakfast! - 10/21/09

    Keeping these in breakfast rotation. Definitely need to use a larger meat than I had, though. I tried it with round turkey slices that didn't come all the way over the sides of the muffin pan and had a little egg waterfall in each cup. Tastes fine but a little harder to get out of the pan. - 10/13/09

    I used egg whites instead of whole eggs. The egg whites take a little longer than 10 minutes to cook. Next time I will cut back on the cooking time of the ham and increase the cooking time of the egg whites. Very good! I will definitely make this again. - 12/15/09

    I've made these for years and let me tell you, they are awesome! Only, I don't cook the ham or turkey first. I add the ham, crack an egg in it, add some cheese, a little tomato & salt & pepper. Then, bake it together for 15 minutes until the yolk sets. Tastes awesome! - 5/4/13

    I altered recipe and dropped calories to only 65 with 9 servings by scrambling eggs and adding onion, mushrooms and red pepper & cutting up the ham into pieces. Used grated cheese and lesser LF shredded cheese. Mix all together and bake 20 minutes. Delicious - 9/2/11

    I've had this recipe for more years than I car to remember! When my girls were small, I would put a round of bread in the bottom of a greased cup, add ham and egg and make faces out of chive, or whatever vegetable I had on hand and they would gobble them up! - 4/29/10

    These were delicious...wanted to make something different, quick and filling for breakfast and found this recipe.
