Introduction

Tender sweet potatoes simmered in a broth of butter, brown sugar and white sugar then thickened with melted mini marshmallows. Tender sweet potatoes simmered in a broth of butter, brown sugar and white sugar then thickened with melted mini marshmallows.

Ingredients

    6 medium sweet potatoes
    8 tbsp salted butter
    1 cup brown sugar, unpacked
    1/2 cup white sugar
    1/2 bag mini marshmallows

Tips

Sprinkle cinnamon over the top for a more dessert-like dish.


Directions

1. Peel and cut sweet potatoes into large semi-uniform pieces. Add sweet potatoes, 4 tbsp butter and white sugar to water and bring to a boil. Cook for 40 minutes or until tender.

2. Add remaining 4 tbsp butter and brown sugar. Cover and simmer for 20 minutes.

3. Sprinkle marshmallows over the top, cover and simmer 5 more minutes or until marshmallows are diffused throughout the broth. Remove from heat and serve.
