    1 package Cooked and diced Chicken
    1 cup fat free jalapeno Jack cheese, grated
    1.5 cups scallions, thinly sliced
    4 whole wheat flour tortillas
    1 Tbsp peanut oil


Preheat the oven to 400 degrees F

Either cook and dice your own chicken or buy the store bought packaged grilled chicken

To assemble the quesadillas, place 1/4 cup chicken, 1/8 cup jalapeño Jack cheese, and 1/8 cup scallions on a tortilla. Top with another tortilla. Repeat with the remaining ingredients to make 8 quesadillas.

Heat about 1 teaspoon peanut oil in a large sauté pan. Place one quesadilla in the pan and lightly brown on both sides, making certain that the cheese is melted in the middle before removing from the heat. Repeat with remaining quesadillas, adding more peanut oil when necessary.

Cut each quesadilla into fourths
