Introduction

Number of Servings: 6

Ingredients

    7 oz. pork belly, finely diced into lardons
    salt, pepper, poultry seasoning & smoked paprika to taste
    3 cloves garlic
    3 tbsp. minced onion
    sprig of fresh rosemary
    1.5 cups chicken broth
    1.5 cups whipping/heavy cream
    3 large eggs, well beaten
    1 tbsp. grated Parmesan cheese
    600 gram shrimp, precooked, thawed
    fresh parsley, chopped (garnish)


Tips

If using raw shrimp, warm gently until shrimp are just pink.


Directions

1. Dice pork belly and season to taste. In a medium saucepan, fry on medium heat until crisp. Remove lardons from the pan and leave fat.
2. Add garlic to pan and stir-fry until soft and fragrant, but not brown.
3. Add onion, rosemary, broth and cream, and heat on medium until just boiling. Remove from heat.
4. Immediately whisk beaten eggs into pan contents, and continue to whisk until sauce thickens.
5. Adjust seasonings to taste.
6. Stir in Parmesan cheese and shrimp, and return to medium heat. Cover and warm through without boiling.
7. Garnish with parsley, if desired and serve over spaghetti squash.

Serving Size: Makes 6 servings (100 grams shrimp with half cup sauce each)
