Not your average tomato soup! Not your average tomato soup!

Ingredients

    5 oz. baby spinach, washed
    28 oz. unsalted diced tomatoes
    4 cups low sodium vegetable broth
    1/2 cup chopped carrots
    1/2 cup chopped celery
    1 medium yellow onion, chopped
    1 clove garlic, minced
    2 bay leaves
    1 tbsp dried basil
    1 tsp dried oregano
    1/2 tsp crushed red pepper flakes

Directions

Place all ingredients in a slow cooker. Stir and cook covered on low for 8-10 hours or on high for 5 hours. Remove bay leaves, stir, and serve.
