Ingredients

    2 serving Egg - Large (1 egg)
    1.5 cup Little Salad Bar Simply Spinach Flat Leaf Spinach - Aldi's
    1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    0.5 serving 1 Med. Green Bell Pepper
    74 gram(s) bell pepper, red, sweet, raw
    0.5 cup, chopped Onions, raw
    0.5 tsp Thyme, ground
    1 dash Salt
    0.5 tsp Pepper, red or cayenne
    1 tbsp Extra Virgin Olive Oil
    1 cup Del Monte Diced Tomatoes, No Salt Added

Directions

Heat olive oil and add chopped onion, bell pepper and diced tomatoes.
Season with salt, thyme, and cayenne pepper.
Add spinach
stir and sauteed and add the eggs.
