    1 Can of Black Beans rinsed, drained
    2 C brown rice
    1 C Veg Refried Beans
    3/4 C of low fat Colby & Cheddar Cheese
    1 Cup of salsa (plus more for topping)
    6 Hard & Soft tacos shells


Makes 6 double decker tacos
Cook brown rice till done
Cook black beans for about 10-15 minutes till soft and add seasoning preference (I ususally use Chili pwder, Cumin, Pepper, Cayenne pepper, Cinnamon, oregano, garlic pwdr & minced onion).
Mix beans and rice together.
Heat taco shells in oven till warm.
Heat refried bean in a saute pan. Add salsa and a sprinkle of cheese (about 1/2 a cup) - mix well.

Slather refried bean mixture onto a soft taco and bind with a hard taco (so the soft is on the bottom w/ refried mixture between the two shells).
Fill taco with beans & rice mixture. Top with salsa, cheese, lettuce or any other desired toppings.
