Number of Servings: 10

Ingredients

    8 cups of reduced fat/reduced sodium chicken broth
    4 cups of water
    1 Tbsp of salt
    1 Tbsp of pepper
    1 pkg (20 Tbsp) of Frontier Eleven Bean Soup Mix
    1.5 cups of spinach (torn into small pieces)

Directions

Rinse and pick through beans. Let soak in water overnight. Drain beans. Add beans, chicken stock, water, salt and pepper to 8 quart pot (with included garni or herbs). Bring to boil. Reduce heat and simmer, covered for three hours. Add spinach (or any other vegetables of your choosing) and continue to simmer for another hour and a half. Remove garni of herbs. Makes 10 2-cup servings.
