Introduction

Ingredients

    4 oz Mozzarella Cheese, part skim milk
    2 tsp Garlic powder
    8 tbsp Ketchup, Heinz
    6 tsp Grey Poupon Dijon Mustard
    6 tsp Lemon Juice 'Real Lemon' 100% juice
    3 tsp hot sauce - Cholula hot sauce
    4 tbsp Molasses
    1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    26 oz chicken breast boneless skinless raw (USDA)
    12 oz mezzetta roasted red pepper strips
    4 serving josephs multigrain flatbread

Directions

- Trim all visible skin and fat from the chicken breast and cut into pieces about 4 oz each.
- Add the chicken and 1 tablespoon lemon juice to a large skillet. Add about 2 inches of water. Bring the water to a boil, then reduce to a slow simmer. Cook, covered, 10-15 minutes, turning every few minutes. Remove from the skillet and shred using two forks. Season to taste with red pepper flakes, basil and thyme.
- Combine sauce ingredients in a large bowl. Add the chicken and mix together.
- Bake flatbread in the oven at 350 degrees for 6 minutes.
- Spread the chicken mixture evenly over flatbread. Layer the peppers and onions evenly over the top and sprinkle with cheese.
- Return the pizza to the oven and bake an additional 10 minutes.

Serving Size: makes 8 servings of 1/2 flatbread each
