    Onions, raw, 1 cup, chopped (I use a red onion)
    Garlic, 1 clove
    Salt, 1/2 tsp or to taste
    Pepper, black, 1/4 tsp or to taste
    Chicken Breast, no skin, 3 ounces
    *Extra Virgin Olive Oil, 1 tbsp (remove)
    Zucchini, .5 cup, sliced
    *Summer Squash, .5 cup, sliced


Toss all ingredients into a bowl and marinate for at least one hour. Then grill until done. I use a veggie basket for the grill. However, if you make the slices large enough, you can just place them directly on the grill. I usually serve this with rice and sliced fresh tomatoes.
