    3/4 cup boiled brown rice
    2 tbsp diced/chopped onion
    1/2 cup stewed tomatoes, chopped
    2 tbsp apple juice, unsweetened
    3/4 cup black beans


On medium-high heat, saute onions in apple juice in a nonstick pan for 5 minutes. Add rice, tomatoes and beans; cook until excess tomato juice has evaporated. Serve with sour cream if desired.
