Savory vegetarian dish based on one my mother made in the '70s. Protein-rich comfort food. Vary amount of seasoning to taste (adding Mrs. Dash is nice for a spicier take). Ingredients

1 cup Brown Rice, medium grain
3 cup Cut Leaf Spinach - Frozen
6 serving Egg - Large (1 egg)
1 cup Cheddar Cheese, Kroger shredded Sharp Cheddar
.25 cup Parmesan Cheese, grated
1 tbsp Kikkoman Soy Sauce
1 tsp *Lawry's Seasoned Salt (by LYONHART1968)
1 large Onions, raw
Tips
Rice may be cooked previous day to shorten overall cooking time.
Directions
Cook brown rice.
Thaw and drain spinach. Chop onion.
Mix all ingredients and pour into greased baking dish or cast iron kettle.
Bake at 400 degrees F until inserted knife comes out clean (30-50 minutes depending on shape of baking container).
Serving Size: Makes 8 servings
