    6 cups fat free ricotta, processed in food processor until very smooth
    1 cup sugar
    2 T. vanilla
    1 cup sour cream
    4 eggs


In the large bowl of a mixer beat together ricotta, sugar, vanilla and sour cream. Beat well. On low speed add the eggs one at a time, just until mixed. Scrape into a greased 9"x13" glass or stainless steel baking pan. Bake at 200 for 7 hours. Cool on a wire rack until completely cool. Serve with raspberry sauce. Makes 18 servings.
