Ingredients

    2 Portabella Mushroom caps
    1/2 tsp Italian Seasoning
    7 Pepperoni slices
    2 slices - Mozzarella (natural Low Moisture part-skim sliced cheese)
    2 leaves fresh Basil
    1 tbsp Tomato Basil Marinara
    2 slices, thin/small Red Ripe Tomatoes

Tips

be sure to drain the liquid. Mushrooms have a lot of liquid when cooked.


Directions

Remove stem of 2 mushroom caps. heat broiler. spray front and back of caps with cooking spray. broil the caps about 5 minutes on each side until cooked through to desired tenderness. drain excess liquid. sprinkle with Italian seasoning to taste. I packed the remaining ingredients for my lunch the next day. I heated the mushroom caps and the pepperoni on a microwave safe plate with a paper towel underneath to absorb liquid. Then I layered the marinara, basil, tomato pepperoni and finally topped with a slice of mozzarella cheese. I microwaved again until the cheese was melted. If you are making this lunch right away you could broil it. For a vegetarian (and lower fat option) add other veggies.
