Ingredients
-
1 sweetpotato, 5" long Sweet potato
1 tbsp Extra Virgin Olive Oil
0.5 tsp Seasoning - Morton Fine Sea Salt (Mediterranean Sea Salt) (by --SHELLEY--)
0.5 tsp black pepper, coarse or cracked or ground (by CHUCKLES0719)
2 tsp Paprika
Tips
For a little heat - I used part EVOO and part Italian spiced (rosemary, redpepper, bay leaves, etc) infused olive oil.
Directions
Preheat oven to bake at 350 degrees (use roast option if available for oven)
Coin sweet potato - 1/8 - 1/4 inch (desired thickness - thinner = crispier, thicker = most "sweet" flavor)
Toss in EVOO
Lay out on cookie sheet.
sprinkle both sides with salt and pepper
Sprinkle one side (the first side up in the oven) with paprika
Bake for 15 minutes
Turn over and bake for another 10-15 minutes
Edges should slightly brown/crisp up and sweet potato coins should "wrinkle" slightly
Excellent for dipping in ketchup.
