Ingredients

1/4 c. Feta Cheese
2 Tbls low fat cream cheese
1.5 whole chicken breasts (3 halves)
1/4 tsp pepper
Dash of Salt
1Tbls Olive Oil
10oz of packaged prewashed fresh spinach
1/4 c. Chicken broth
2 Tbls. Pine Nuts
1 Tbls. Lemon Juice
Directions
1. Preheat oven to 375,
2. Combine feta cheese and cream cheese in a small bowl; set aside. Cut horizontal slit through thickest portion of chicken to form a pocket. Stuff pockets with cheese mixture. Sprinkle chicken with sal and pepper.
3. Transfer chicken to baking dish. Brush with olive oil and cook for 20-30 minutes or until cooked through.
3. Add chicken broth to a skillet. Bring to a boil and add half the spinach. Cover and cook until spinach is just wilted. Remove spinach and reserve lquid. Repeat with remaining spinach. Return all spinach to the skillet. Stir in pine nuts and lemon juice. Divide spinach among plates and top with chicken.
