Introduction

Note: RICE stays at bottom of soup so "dig deep"into 8 qt. pot before you serve it HOT!!!!
I ALWAYS ADD Shredded Parmesan Cheese{1/4 cup for ONE Cup of soup}as a TOPPING and add the cals separately! It REALLY is FUN to have a cheesy topping on the soup and the cals are so LOW ,it is easily "affordable" in calories!
ENJOY with soft Ciabatta bread for a GREAT ,WARM MEAL!

    4 medium Carrots, raw
    184 grams Celery, raw
    3 ear, small (5-1/2" to 6-1/2" l Sweet Corn, Fresh
    2 medium Summer Squash
    3 tbsp chopped Fresh Chives
    .50 cup Wild Rice
    16 cup Imagine Organic Vegetable Broth
    141 grams Green Beans (snap)
    4 serving Sugar Snap Peas, Raw ` edible-podded, raw [Snowpeas, Sugar snap peas] 10 pea pods 34g
    1.92 tbsp Cilantro, raw
    3 small (1-3/4" to 2-1/2" dia.) Potato, raw
    201 grams Zucchini
    425 gram Tomato Sauce (Kirkland) (by TOMMYTAILS)
    5 tsp Garlic, minced - McCormick (by EVESRUN)
    .12 tsp Cumin seed
    .12 tsp Thyme, fresh
    12 tsp Lawry's Minced Onion (dried) (by CRISSMAN00)
    1 tbsp Parsley, dried
    1 serving Worchestershire Sauce (by AWAKELIN)

Tips

Allow ALOT OF TIME for simmering in pot ~3 hours minimum!


Directions

1.Pour broth into 8 qt.pot.
2.Cut and prepare all veggies and put them in soup.
3.Add all the spices and herbs to the pot.
4.Bring to LOW BOIL for ONE HOUR.
5.Then,SIMMER for THREE HOURS or how soft snap peas are preferred.
6. Enjoy with soft bread~I suggest Ciabatta~170 cals per slice or cut instead of 6 slices cut 8 and cals go down to 127 per slice!The bread is entered in my cupboard if you need info.
