Introduction

A healthy, delicious, and satisfying vegetarian soup. I created this recipe to duplicate the vegetarian lentil soup I used to order for lunch regularly, until it got too expensive! Ingredients

    1 cup Lentils
    4 cup Vegetable Broth
    1 cup GOYA Chick Peas (Garbonzo Beans)
    0.75 cup Kroger Mirepoix Style Blend (onion, carrots, celery) (3/4 cup) (by KADUFRESNE)
    2 tbsp Extra Virgin Olive Oil
    2 clove Garlic

Tips

This recipe can easily be adapted to suit your taste or to make use of any veggies you have on hand. Served with a salad it's a complete meal.


Directions

In a large sauce pan, saute the mirepoix blend and crushed garlic cloves in the 2 TBLS of olive oil. Stir in the drained chick pea. Add the vegetable broth and lentils, and bring to a boil. Reduce heat and then gently simmer on the stovetop for 30 minutes, or until lentils are tender, with the lid tilted. Add seasonings, as desired. Serve hot. Tastes even better reheated the next day.
