Number of Servings: 8


    4 to 6 cups of prepared to bite size pieces of broccoli
    1 red bell pepper cored and sliced
    1 orange bell pepper cored and sliced
    1 yellow bell pepper cored and sliced
    2 heads of garlic (more or less) peeled leave cloves whole
    2 Tablespoons extra virgin olive oil
    4 Tablespoons butter or equivalent
    4 to 6 slices pepper jack cheese or 2/3 cup shredded


Place a large skillet on low heat extra virgin olive oil and add butter and melt. Add the garlic and cook slowly over medium low heat for about 10 minutes to incorporate flavor to butter and oil. Remove garlic if desired and add broccoli and peppers. Turn skillet to medium heat and cook until tender crisp. Remove from heat and place cheese over the top of vegetables. Cover and let stand for 2 to 3 minutes to melt cheese then serve immediately.
